Divinity
Mom always use to say, "Never make divinity on rainy or very humid days, because the candy won't set!"
Treasures from Leigh's House
Mom's (Emma Lee's) cookie cutters. Grandma Logan's Jewel tea pitcher, pillow case, quilt. Grandma Lyon's glass bowl. Aunt Francis crochet cross bookmark. I am thinking the little glass serving tray was Grandma Logan's too.
Chocolate Candy
I can remember Mom making this and every once in awhile it wouldn't set right! As kids..that didn't matter. We would just grab the pan and a spoon and start scooping. This recipe isn't like fudge. It is a little darker in color and richer in taste.
Salt Water Taffy
One time Patti and I begged and begged Mom to let us make taffy on our own. We did fine until it came time to "pull" the taffy. We had taffy stretched from one end of the kitchen to the other! Needless to say,,we were never allowed to make taffy again! I wasn't for sure if the recipe was still around. So I went searching for it in the Searchlight Cookbook of Mom's. When I found the page it was, well used..yellowed and could tell it had been very sticky at one time! So I am sure this is the recipe Mom used and I am sure Patti and I contributed to the page being "sticky".
Lu and Leigh's Mator Juice
Lucian and Leigh’s Tomato Juice
Get juice and place in pot and heat, do not boil. -Lu and Leigh squeezed 1 million tomatoes to have enough juice.
Put pot of water on and boil, place rings and lids inside water to soak.-When cooking with a partner double check to make sure they have turned burner on.
Sterilize jars, pour boiling water over them. -Place 2 pans of water on to boil in case cooking partner dumps one in the floor.
Pour juice into jars, fill to bottom line on jar with juice.-Establish who is the “official” pourer so as to alleviate control issues of both cooking partners.-Have extra towel ready to wipe excess juice spilled by “official” pourer.
Add 1 tsp canning salt into each quart jar of juice-Always double check with cooking partner to see if they have already placed salt in jar and read article about how to remove excess canning salt in homemade tomato juice.
Put lid and ring on and tighten. Using a pressure cooker to seal jars, from Better Homes and Gardens Cook Book
Put 2 quarts water in bottom and place jars inside. Turn burner up enough for steam for 3-5 minutes.
Turn burner down and put jiggler on top. Bring pressure to 10 and keep on for 10 to 20 minutes.
Take off of burner and wait till burner drops to 0.
Open carefully. Lift jars out with towel and let sit for 24 hours.
You may hear lids popping while cooking.
( I actually called Patti the day the tomato juice was being made. I asked her what she was doing. She replied, " I am watching Lu and Leigh make tomato juice..they have taken over my kitchen ..and I am very scared")

John Wayne Cheese Squares
16 oz Monterey Jack Cheese, 16 oz Colby Jack Cheese, sliced mild Pepperoncini peppers (pizza peppers), 5 eggs, 2/3 cup evaporated milk, 1 tablespoon flour, salt, black pepper & garlic to taste.
Layer 1/2 of cheese, top with peppers, then top with the other half of cheese. In a separate bowl combine eggs, milk, flour & spices. Stir well. Pour on top of cheese layers. Bake at 350' for 30 minutes.

Swedish Nut Cake
CAKE Ingredients: 2 cups sugar, 2 eggs, 2 cups self-rising flour, 2 tsp. baking soda, 1 20-oz can crushed pineapple in it's own juice, 1 cup walnut pieces
Directions: Mix together all ingredients & bake in a 9 x13" pan at 350' for 25-30 min.
FROSTING Ingredients: 8 oz. cream cheese (softened), 1 stick butter (softened), 1 3/4 cups powdered sugar, 1 tsp vanilla flavoring, 1 cup walnut pieces
Directions: Mix together all ingredients until creamy. Spread on the cake while it's still warm.
*Great Fall cake- great with coffee too!

Family Favorite
I don't really have a recipe for this. Mom says Grandma also made Banana Salad so I know it has been around for years!
Banana Salad
Banana's cut into about 1 inch pieces
Cover banana's with Miracle Whip
Then roll into finely chopped peanuts.

I hadn't really noticed the date on this recipe! September 23 1956. The recipe is old and falling apart as you can see. I loved the ads on the back so had to show them too! Not really for sure if Mom ever made these cookies or not.

Boiled Icing by Emma Lee Lyon
David's favorite Chocolate Birthday Cake Icing
Combine 1 1/2 c. sugar, 1/8 tsp. cream of tartar, 3/4 c. boiling water, few grains of salt. Stir until dissolved. Boil till a soft ball stage (236'). In the meantime, beat 2 egg whites stiff. Pour sugar mixture slowly into egg whites while constantly beating. Add 1 tsp. vanilla. Beat until thick & creamy.

Cauliflower Salad
Emma Lee Lyon's recipe
Cauliflower, cut up
small onion, diced
1 green pepper, diced
1 tomato, diced
Mix 1/4 cup sugar, 1 cup Miracle whip salad dressing, small jar bacon bits & 1 cup shredded cheese. Toss with vegetables. Chill about 3 hours

Corn Pudding
Emma Lee Lyon's recipe
1 can cream style corn
1 can whole kernal corn, drained
1/2 stick butter
8 oz sour cream
2 eggs, beaten
1 box jiffy corn muffin mix
Add in this order: melt butter in a flat baking dish, add sour cream, corn, eggs & muffin mix. Stir well. Bake at 350' for 1 hr

Veg-all Casserole

2 cans veg-all, drained
2 sticks butter
8 oz Chez Whiz
1 sleeve of Ritz crackers, crushed
Melt 1 stick butter & chez whiz together. Put veg-all in dish pour chez & butter mixture over this. Top with crushed crackers. Melt last stick of butter & pour over top. Bake 350' about 25-30 min until brown
Mary Lou's variation: Mix chez whiz (no butter)into drained vegs, place into dish. Melt 1 stick butter & mix crushed crackers until blended, spread over veg & chez mixture & bake. Enjoy!
